Hi, ladies!

Christmas is right around the corner and in exactly a week Christmas Eve is here! Don’t know about you, but we are more and more excited every year. There’s nothing more beautiful than adults getting a chance to return to their childhood times and nobody can say a bad thing about that. Even if it’s about the Christmas decorations, watching cartoons and fairytales and eating Christmas sweets… Agreed?

Speaking of which, how is it with you and baking Christmas cookies? We have to confess something. We are not really putting in a lot of effort when it comes to that.. 😀 But maybe it’s because we don’t have kids yet and don’t like throwing food out. Despite that, we’ve prepared a recipe for you this week. It’s quite simple and what’s interesting is that you don’t actually need to bake it. It’s just frozen dough and it’s an American Christmas delicacy, so definitely try it and you won’t regret it!

1. No-bake chocolate balls

This US specialty tastes incredibly yummy, try it!

Ingredients:

113 g of butter

¼ of a cup of sugar

1 teaspoon of vanilla extract

1 cup of semi-coarse flour

¼ of a cup of chocolate chips or shaved dark chocolate

1 teaspoon of salt

dark chocolate for coating

Method:

It’s super easy! We put butter, sugar and vanilla extract into a mixer. Mix until you get unified mass. Then add flour and salt and mix about 5 more minutes. At the end, add chocolate chips (those of you who don’t like chocolate or would like to have it not that sweet, you can leave out the chips).

Prepare a baking tray (even though we won’t bake anything) and place baking paper on it. Shape small balls from the dough we have and put them on the paper. Leave in the freezer for approx. 60 minutes, so the dough hardens. After about 50 minutes, we start cooking the chocolate. After an hour, we take the balls out of the freezer and start coating them in the melted chocolate (we used chocolate frosting specifically for frosting, but we are not sure, if you can get it in Slovakia). We sprinkle the coated balls with Himalayan salt and put in the freezer for 15 more minutes. Then the balls are ready, yum!

2. Healthy coconut balls

Ivka came up with this recipe for you because you can eat healthy even at Christmas…Well. We don’t need to overdo it, but these balls definitely deserve a try!

Ingredients:

1 cup of peanut butter

3 cups of quick oats (the softer kind)

3 cups of shaved unsweetened coconut

½ of a cup of butter (115 g)

1 cup of sugar

½ of a cup of milk

¼ of a cup of honey

6 tablespoons of cocoa powder

2 teaspoons of salt

1 teaspoon of vanilla extract

shaved coconut for decoration

Method:

Heat butter with sugar, milk and cocoa powder up in a pot. When everything is melted, add the oats and coconut. Create small balls from the mass, then coat them in coconut and that’s it!
