What’s up, ladies! We’re here after being quiet for two weeks and there’s a simple explanation. Everything kinda piled up. Ivka has already gone back to the US and right now we are focusing a lot on getting our new collections ready; they will be up on our e-shop in September. Until then, don’t wait up and enjoy the big sale, we have at the moment, with up to 70% discount! 🙂 We’ve decided that today is going to be about healthy sweets, because we love sweets! But we also want to live healthy and that’s why we are always trying to look for a healthier alternative.

This great summer period is well-known for friends coming over, having barbecues and enjoying warm summer weather. So, when you are expecting some guests or you are the guests yourselves, how about making some healthy and yummy sweets? You can do it without any flour and sugar, you just need to be a little creative! Today, we’ve prepared have two unbelievably tasty recipes, which even please the eyes!

Raspberry-lemon chia cheesecake

This fresh dessert not only looks good but tastes great, too! And the best thing is that you can have it without any regrets because there’s nothing unhealthy and nothing that would make you gain weight in it. Let’s start!

Right off the start, we’d like to warn you that each layer needs to stay in the freezer for a few hours, set enough time aside for preparing the cheesecake. Ideally, make it one day before serving.

Ingredients:

Base:

1 cup of walnuts

3 date without pits

½ tablespoon on coconut oil

a pinch of salt

 

White layer:

½ cup of cashews (put into water 4 hours before starting)

½ cup of whole coconut milk

¼ cup + 2 tablespoons of maple syrup

1 teaspoon of vanilla extract or 1 dried vanilla

½ teaspoon of sea salt

 

Pink layer:

340g of frozen raspberries

½ teaspoon of lemon juice

2 tablespoons of maple syrup

2 tablespoons of chia

Directions:

Mix all the ingredients for the base (doesn’t need to be completely smooth). Put baking paper into the form. Put the first layer of the base in. Squish is as much as you can, so you have a layer about 1cm high. Leave in the fridge for about 15 minutes (or until we prepare the next layer.)

As with the previous layer, we’ll need a mixer as well. But we need to make it smooth this time. Don’t forget that you can work with cashews after their 4-hour bath! And we get creamy mass, that we carefully pour on top of the base, smooth down with a knife and leave in the freezer for at least 2 hours until it’s really hard.

We mix the ingredients from the last layer altogether, too. You don’t need to wash the mixer in-between the layers, it’s quite pointless (just a little hint for the lazy ones as we are :-)) And we mix it until we get third beautiful, pink mass. We put this one into the freezer individually, so it stiffens more or less, until the second layer is done. When that happens (after about two hours), carefully place the pink layer on top of the white layer, smooth down with a knife and put back into the freezer. For at least 4 hours, overnight would be the best.

20 minutes before serving, get the cake out of the form, cut it with a sharp knife and let it melt for a bit, let the guests keep their teeth! And then we happily eat this healthy and diet summer dessert, that will definitely refresh you and your guests!

 

Carrot balls

You can take these tiny, cute balls with you to work or as a snack, eat them with a clean conscience that you are doing something for your health. The main ingredient is a carrot, if you eat it regularly, it definitely helps your eyes, lowers the cholesterol level and helps digestion. But that’s far from everything! If you suffer from migraines or joint pain, carrot is what can help you!

And it’s so simple!

Ingredients:

1 cup of sunflower seeds

1 cup of unsweetened coconut + 1/3 cup for the coat

½ teaspoon of cinnamon

½ teaspoon of sea salt

12 soft dates without pits

2/3 cup of carrot cut up to circles

2 teaspoons of maple syrup

Directions:

Mix all the ingredients together in a mixer until you get this sticky mass. Shape small balls from the mass and if you like ground coconut, you can roll them in it. And voila! Here you have a healthy snack!
